He liked making very, very small irish emblems out of marshmallows after a long night at the pub?
Haven't a clue :-/

Does it have to do with either of those two and his irish heritage?

In a brain storming session he was inspired by the combination of Cheerio's and candy circus peanuts, creating the first marshmallow cereal. He later became the Vice President of General Mills, and was killed along with his wife in a tragic car accident in April of 2000.

John Holahan, a product developer for General Mills, was brainstorming while in a supermarket aisle one day in 1963, when he noticed a bag of orange marshmallow circus peanuts, and one of his favorite candy. He took the bag to the lab, cut the candy up & sprinkled some over a bowl of Cheerios. His first taste confirmed his suspicion--they were just right. It took work & good fortune--to create the tiny, delicately shaped marshmallow bits, but in 1964, the company introduced what would become one of its leading cereal brands.....Lucky Charms!
Interesting, huh? I found this article in my Reminisce magazine.
